Played a couple of hours using a single daisy chained pcie connector. How did I manage to run it if a single connector only provides 150w and 75w from motherboard? Rated wattage is 250w? Did it damage my gpu?

150W is the rated, there's a lot of safe room plus 5070 isn't really a power hog, plus well build modern PSUs are designed with even more safe room in mind...
I suggest using 2 cables just for safety and dont worry about it further.

What if you are using a relatively old 3 year old? (but model design i believe is much older). Power spec psu rated at E on tier list. 650 watt

Each of the two daisy chained connectors is rated for 150w. The whole cable is 300w.
It's perfectly fine to use it unless it's like a C tier PSU.

I bought an RTX 5070 12GB. I have an E5 2640 v3 that I plan to upgrade in the future. I got the card because it was very cheap, and I'm sure it will get more expensive this year. I also have a Corsair 550W 80 Plus Bronze power supply with only one PCIe cable. Next month I want to upgrade it, but if I use it with only that cable, it will turn on, and if it does, could it damage the video card? Can anyone help me?

PSU side is designed for 300W per connector for two 8-pin PCIe connectors, no matter if daisy-chained or split.
Also it is the other way around - GPU draws, not PSU pumps. The damage would be PSU and the cable not GPU.
If you are using provided adapter correctly you are fine.

The plug is rated for 150W. If a power supply has more than one connector on a single cable, the PSU manufacturer should be using thicker wires that support 300W on the cable so that each connector can provide the full 150W. (emphasis on should).
