The redness is very clearly the bone marrow: raw chicken isn't red like that. The chicken itself doesn't look raw, but it's hard to tell. It's certainly not a normal way to plate chicken, though, just chopping through the bones like that.

It's perfectly rotisserie cooked. It's always still got that pink blood close to the bone. But the muscle is white and firm without being dry and crumbly (ie overcooked).

How dark are your chickens? "Dark" meat is just a couple shades more brown than "white" meat. The meat is all "white" compared to the pink jelly of raw.

That is more than bone marrow and had to explain bone marrow enough to customers. I used to work for a rotisserie chicken restaurant. This is not cooked enough. I absolutely would not serve that nor would I accept that as a customer.

It's also, quite clearly, RAW bone marrow. Bone marrow when properly cooked has a duller, more brick-red coloration, not the fresh red of uncooked blood.
I am deeply upset that some people here see this as fully cooked. One of those things that makes me wonder.

Was gonna say this myself. We had to stop serving bone in chicken at the assisted living facility I used to work at, soley because we had way too many people not know that the color is pinkish red right by the bone. This chicken is most likely cooked, it would be easier to tell if you cut into a larger piece not connected to bone.

I love traveling and trying new foods. But I couldn’t honestly imagine ever agreeing to try chicken sashimi. Even with an ER ready to go, I’ve had an infection that kept me in the hospital for a week before. Not from food poisoning but nonetheless. I had complications for a year and a half afterwards

I can’t believe no one else has mentioned it, but in these situations anonymous complaint to your local health department can really go a long way towards preventing other people from getting sick
Don’t feel bad about hurting someone’s feelings or getting someone in trouble. A normal person could get sick from that. If someone who was immunocompromised ate undercooked chicken there could be severe illness up to and including death!
Food safety is no joke! The person in charge in the kitchen should be ashamed of themselves for sending it out without temping beforehand 😤

This is not raw chicken. It's a little difficult to tell exactly what it is - possibly bone marrow, possibly part of the joint (where the bone is thickest anyway), possibly an unusual blood vessel makeup or some combination of all of those. But, I can say one thing for absolute certain:
No chef would have ever been able to tell that without cutting into the chicken. It was NOT raw, and you can very clearly see that in the meat - not just the outer layers but the pink that you see in the meat is nothing like "raw chicken" pink, it's sort of "some blood or myoglobin". Some chickens are different to others, and we've been sanitised to never expect anything like this, but it's just a fact of meat that sometimes you're gonna get this stuff - and, substantially more if you cut through bones and joints.

Sorry to see that, hope it didnt ruin your mothers dinner. Stuff like this happens, even in high end restaurants. Different pieces of meat have different temperatures/thickness/fat content, shit like this just happens sometimes. The problem here is no one checked before sending it out. This is the exact reason a lot of restaurant with more seasoned chef, even your neighborhood restaurant, tries to precook meat as much as we can, especially high risk meat like chicken or pork.
In the last decade, every kitchen i worked in had used sous vide to cook all protein except seafood. Its just safer on top of giving good texture/retain moisture.

If the chicken was butchered fresh and never frozen then this is fine. Chicken meat will stay red after cooking if the chicken was never frozen, most people don’t know that and aren’t use to it.
