My Mother’s Day brunch I made myself while my chef husband was at work.

I'm southern and I like breakfast. I like to affectionately call meals like this "breakfast slop" and, speaking from experience, they almost always taste either exactly as horrible as they look or are some of the best breakfast food you can find. I'm hoping it was the latter for you!

It’s a hash brown casserole and I followed a recipe. He told me it was going to be mush and not work. It’s delicious though.

It was frozen shredded hash browns, can of cream of mushroom soup, a cup of sour cream, 2 cups of shredded cheddar cheese and kielbasa! If you message me I’ll share the recipe picture with you and you can laugh with me at how different the picture looks from mine 😂

Yeah that’s basically funeral potatoes but I’ve never seen it with kielbasa tho I’m sure it’s good. They never look great but it’s delicious. We usually do cream of chicken instead of cream of mushroom.

I grew up in a household where my dad was a chef, when he was home we ate like queens, when he had to work, which was most meal times, we ate questionable foods like the above lol. At least it tasted good!

He rarely cooks at home which is totally fair. He does the fancy stuff like steak and prime rib or breakfast potatoes because I suck at those 😂 other than this I’m a pretty good cook! He gives me tips and it helps a ton.
