I am visiting a friend and did not understand how to turn of the oven so they stayed in there at about 200°C for almost 1 Hour.

Ovens remain hot for a while after turning them off.
Even if you had turned the oven off they would have continued cooking. According to a quick Google search an oven can stay hot for anywhere between a few minutes to over an hour.
You do not want to leave bread in the oven.

I had a similar incident 5 years ago. I spent all day proofing a sourdough loaf and finally put it in the oven (at 500°F) around 9:30pm. Fell asleep on the couch for about two hours. Pulled it out when I woke up and it was just a lump of charcoal. Much like you, I'm glad that's all I got instead of a house fire

omg that happened to me, the parchment paper on one edge of the pan had lifted and it caught on fire because it touched the top of the oven! (which was at a normal temperature btw)
I yanked out the whole thing, managed to rescue my chicken burgers lol, literally as the flame was getting closer to the center of the pan, and then I quickly put out the fire with water in the sink.
(it took about 3 seconds, it was a small flame but it moved fast!)

That was hardly life-threatening, the parchment paper was inside a steel pan. It would have just ended up, like, a pile of ash.
But, ever since, I've been super careful about cutting the edges of the parchment paper (one side was slightly overhanging the edge of the pan, and as I was putting it inside the oven it touched the top for a split second. It's easier than you think!)

Parchment paper burns quickly, but it also isn't a big fuel source (like a grease fire). Basically a large sheet of paper. Unless you drop it onto something else that burns, it will burn and go out on its own once the fire has consumed everything.

Y'know some ovens use an open flame to heat, right? And even electrical ovens can get over 500° f which will definitely start a fire. Even 350° f will start a fire with the right fuel, which dry ass bread and parchment paper are pretty damn good fuel
