Everybody loves the classic MOPAR starter motor sound - it's been dubbed in as the starter sound of cars in countless films and shows.
It was one of the first starters with a "gear reduction" so it had a unique whining sound at the time. Once that technology started being picked up by other manufacturers, other cars had similar sounds but still not quite exactly the same.

A gated manual is cool and I bet exactly what you imagine or better. 427 Vette Crusher was heavy like a hammer and Ferrari's just precise. The column automatics of older Rolls are thin like an old metal turn signal stalk, but heavier an sturdier than it seems it should be. They're smooth enough to bring it out of park with your pinkie and knock it clear into low with your pinky if desired, but the gear detents will center and hold great. Nicest hydromatic shifter you could imagine.
They all remind me of the heft and smoothness of holding and rolling a pinball around, if that makes sense.

My car doesn't have a Turbo or a supercharger, but it does squeak and rattle a bit (33 years and almost 300,000 miles), and the transmission has a very notchy feel and sound to it. It's all a part of the "personality" it's developed over the years.

In some cars the warning sounds/seatbelt sound are unique and great. Also I already gave up on exhaust/intake sounds because of regulations, and getting attention really, so I really like well made fake engine noise. My favorite sound of a car can only be made by a manual gearbox car...the "wavering" sound between gears when you have JUST up-shifted, and you're starting the next gear. It's a mixture of the sound from the previous gear and the next gear, the way the engine wavers/varies.
Dual clutch cars make a cool sound that I like, but it's sharp and super consistent. Auto cars make a dragging of the engine note kinda sound. Manual cars have that absolutely PERFECT sound "between" the gears. It's incredible, absolutely incredible.

There's this sound my current car makes that tickled me just right. It's a mechanical noise that comes from somewhere in the front of the car (I don't know where honestly). It happens only when the engine is warmed up and while letting off the gas in first or second gear (at low speeds). Sort of "OUUHwhhuoouuuhhhhhwww". The first time I heard it, it immediately brought me back to my childhood, and my uncle's '97 Subaru Impreza. That car made the exact same sound in the same situation. Hadn't heard it since. I love it every time.

Its kinda exhaust but naturally occurring pops and bangs are nice. My car generally runs smooth with no pops or bangs but occasionally it'll crackle a bit when revved and it sounds nice.

Loud electric motors sound pretty awesome if you're into that. Under hard acceleration or regen I can hear both whirring in my car. When going uphill at low speeds I can hear the front motor whirring louder than usual (higher load for increased front-axle power I assume). You can usually hear them under heavy regen in a lot of hybrids too, spaceship sounds & distinct from the pedestrian warning noise.

Hood close sound on BMWs with the front facing hood. The high-ish rpm upshift tone change in older 4-5-speed cars. Door/trunk sounds are also interesting, both in older high end and low end cars for different reasons. The slight howl/whirr of the auxilary systems in an otherwise smooth idling idi gasoline engine.
And in general I really like older turbodiesel noises. How they sound under different loads, the turbo sounds, etc.

Transmissions clunking or clacking into gear. But that's more of a truck thing. Also on automatic transmissions when you "load" the torque converter. Like when the engine revs up then hits the stall speed and suddenly has a deeper tone.
