Terminal emulators

Hey everyone. At work, we use a terminal emulator on Windows called "SimpTerm" for shop floor PCs to connect to the Data Collection server. The only thing special about this term emulator seems to be that F5-F12 are pre-configured to send Escape sequences. For example, F5 = \^\[OM, F6 = \^\[\[17\~, F7 = \^\[\[18\~, etc. I'm playing around with the idea of replacing the aging Windows computers with Linux Mint boxes, but I'm running into a problem with terminal connections. I've been using Linux distros off and on for 25+ years, but I feel totally lost. Can someone please help me understand how I can remap F5-F12 on a Linux terminal so they also send Escape sequences like I mention above? I've spent days trying to figure this out and I'm getting nowhere. This seems ridiculously easy, but I can't find a single shred of information on how to do this. Argh...
