Bog standard? pre-made? The biggest reason that everything is wrong with our pasta is the climate. Italy is full of tomatos, and olive oil. The right sort of wheat for pasta is grown extensively. So making pasta sauce from scratch is dead easy. We can grow tomatoes, but they are seasonal and a big faff. And so on.

Yeah I agreed. You do need the right ingredients. Tesco/Sainsbury do have pasta from south of Italy and “wine” cherry tomatoes from somewhere in Kent (?) which are not bad.

The difference is, in the UK you have to search and choose. In Italy or in Mediterranean France, say, you can find the right ingredients (for this type of cuisine) everywhere. Some while back we bought a cookbook by a British ex-actor who had retired to the S of France. The recipes were v simple (they were related to managing his diabetes) therefore good, but it was clear that he had access to all the Mediterranean ingredients, so he could just get them out of his garden etc.

Oh yeah sorry I just gave it for granted that you need to be picky with the ingredients. You cannot buy the first pasta made from god knows where you find at the local h24 corner shop.

Fry onions, peppers and whatever else you like, add garlic, salt, pepper, smoked paprika, chopped chillis, basil, oregano and fry another couple of mins, add passata or chopped tomatoes and simmer until any water has gone. Boil pasta until al dente (fresh pasta done in less than 5 mins), completely drain and add to the sauce. Stir on the heat for a couple of mins. Add to bowls, add cheese on top. Repeat until immobile and then rest

Passata some garlic and mixed herbs is all it is plus a ton of sugar and salt. It's cheaper to buy the 3 main ingredients and heat it whilst boiling the pasta.

Boil salted water, fully cook penne (none of that *al dente* shit), add petit pois, stir in a little bit of butter, add a tomato-based sauce (preferably spicy), top with cheddar/mozarella blend. Italy go fuck yourself, this is how I like it.

Ultimate life hack is pre cheesing the plate. Then put the pasta and sauce on top of that and then more cheese to finish it off. Mmmm cheese.

Cook the pasta, stir the sauce in to the pan so it’s all coated. Serve into bowls, grate cheese over the top. Eat with toasted sourdough slices
