I think this is one of those cakes where it is really hard to screw it up to the point that it tastes bad. I don't even like pineapple that much but one of the best cakes I've ever had was when I made one of these on a whim because I had flour and tinned pineapples that were about to go out of date.

That still looks pretty dang good. If you're feeling adventurous, try crushed pineapple instead of rings. I'm not sure what kind of pan you're using, but if you can get the bottom pretty hot before pouring in the batter you should get a better looking pineapple top. Would smash.

First time I ever made a pineapple upside down cake, or baked anything for that matter, I didn’t let it cool sufficiently before trying to take it out of the Bundt pan. It collapsed into a half baked pile in the plate. Ate it with a spoon and it was fucking delicious
