I have a Mexican style tomato rice recipe that would make these guys shit themselves (in a good way). Fry off onions, garlic, chilli then empty a tin of chopped tomatoes into washed rice, fill the tin with boiled water and add a stock cube and add that into the rice. Cumin, mexican oregano, white pepper, salt to taste, cook the rice until almost done, then last minute squeeze a lime and stir through fresh cilantro and green chillies. It's honestly the best side to tacos etc

Maybe not authentic Mexican, but was absolutely authentic New Mexican, the best tacos I've had in my life, pinto beans were whole not mashed, rice was white, fluffy and flavorful. The salsa was blended, not chunky and so good I would consider drinking it. Chips fried fresh and hot. Only 10 perfect items on the menu. I would commit crimes to eat at that restaurant again. Unfortunately, after 50+ years, it closed when the owner's health started failing and his kids didn't want to take over (which...fair, I guess).
There's a close second that is also a long-standing, family owned place, in a historic location, but the rice and salsa are different.

I've built my own small business into something I can give my daughter if she ever wants it. You have to add salt while you are cooking so the beans absorb the salt. Salt on top is good in a pinch but it won't replace cooking with salt. Anyone who tells you to undersalt everything because "people can just add more" is giving bad advice.

It's how you make a simple Mexican style rice. My mom for example will just blend some tomatoes garlic and onion with a chicken bouillon cube and some water. Toss the washed rice into a large pan with some oil so the rice crisps up just a little bit before pouring the tomato mix. The rice absorbs all the flavors so you get a nice light orangey colored rice with a tomato kick to it. She'll also add a bag of mixed frozen veggies for convenience of peas corn or diced carrots.

I do 'Mexican' rice in rice cooker for 6 of us. It's easy (except for the water measurement part). Basically prepare white rice as normal (I do 4 cups), except fill the water just to barely cover the rice. Add a diced onion, some minced garlic, some bottled salsa, diced green pepper, garlic salt, pepper, cumin powder, diced fresh oregano (optional, I have a huge bush), 2T butter and chicken bullion. Mix it all up and fill the water to the line above what you normally would (ex. A tad over 5 for 4 cups of rice). Cook. Stir it up with lime juice and sprinkle cilantro if you have some. Fairly easy for a set and forget side if you need to run errands

It sounds so simple but tastes amazing. It's one of my go-to rice dishes when I'm hungry and have leftover rice in the fridge. I also have a bunch of rice casserole dishes with some sort of chicken I like to throw together quickly. Rice is life ❤️😭

Rice casseroles are also really good my mom also has a recipe for them with broccoli mushrooms chicken and cheddar cheese that's really good! I hope your rice turns out good when you make it 😁

I miss living in my old apartment complex with tamale abuela. I worked until late at night so I was home when everyone was at work, I’d take a walk around the common area outside and she would always be sitting on one of the benches. I’d sit and hangout with her after doing a few laps and we would just talk about usual day to day stuff. Every weekend her family would be outside having a cookout and when I would come home from work she would shuffle up to me with a big plate wrapped in tinfoil and a beer or two.
I never asked, never even mentioned either needing food, being hungry, anything. Even before our little talks in the mornings and getting to know each other, she would always have a plate ready for me. She instinctively knew I was going through some rough stuff just by looking at me and when we did start to hangout she told me she could just see it in my eyes.
I want to say I don’t think she could know how much that meant to me but being a mother and a grandmother I think she knew.
Ever since then, I’ve always taken the time to just be nice when I can. A little kindness goes a long way, and you never know how much that little kindness can change someone’s world. Thank you abuela for everything.
Didn’t mean to go on and on there but this all reminded me of when I lived next to tamale abuela. Everyone deserves someone like her in their lives.

Depends where you are. In my state you don’t need a license, just have to state you aren’t affiliated with the health department and there’s certain restrictions such as no dairy etc. and honestly you probably won’t be bothered much unless you’re trying to operate a legitimate business with branding and stuff. I share a stand with a neighbor and we sell veggies all summer by an honor system. The health department still could show up and shut it down for reasonable cause tho I believe.

I thought that didn't apply to local pieces. This issue came up around the original pink sauce, before Dave and Buster's legitimized it. He concoction would be perfectly fine to sell locally but if it travels town lines when I started having a travel distance then it would be illegal. it probably is illegal to be fair. Food is one of the most heavily regulated and controlled industries in the United States. Without a buisness, several licenses, amd regular inspections it's likely not legal. much less the actual case of false advertisement you could sue for.
