I've perpetually puzzled over whether one layer of the humor in this scene is that Riker is irrationally overconfident.
One clue that is also ridiculous is that Pulaski observes that Riker has a "practiced hand" because he is capable of POURING EGGS ONTO A PAN. These people would die without replicators.
I always thought she was being sarcastic, but you made me view this scene from a completely different angle. Lol it could totally have been shot as showing what "cooking" food is like to them in the future, like to a child watching an adult make anything. Or this is Riker being a hipster hahaha
I mean obviously I've never tasted replicated food but I am extremely skeptical that it's actually any worse than normal food. The tone with which people talk about replicated food versus hand-prepared is very much the way people today insist that certain things are better when in reality there's no way they could tell the difference. Riker is absolutely being a hipster.
This is why Pulaski showed up with booze. She had that feeling this was going to be a short shitty meal if she didn't salvage it with some good cheer...

I bet they ordered some good tasting replicator eggs to cover up the bad tasting ones. Like anyone would do with a good pizza once they finished the bad one.
No butter/oil, no salt or pepper, and a serve yourself cheese bowl. What a terrible 'omelette.'
Also love the part where he just dumps the eggs onto a griddle and Polaski gives him a compliment like that was some fancy culinary technique he just did.
Imagine if Jacob Sisko was at this meal and being served this XD.
It's almost weird how in all of TNG, in my mind, this stands out as one of the times when what was being said in the dialogue and what was happening on screen simply did not match up at all...
