I'm upgrading from a gtx 1080 to a 9070xt, and need help figuring out what's changed.

I have the 9070xt in hand. I didn't think any of this through. My goal was to get a GPU that wasn't scalped to high hell. I realize that I haven't paid attention to this space in a while and my information is outdated.
In my previous build experience the amd CPU stratification was very simple. Ryzen 3 <- basically for Chromebook. Avoid at all cost. Ryzen 5 <- good mid range and won't bottle neck your system while GPU is churning our frames Ryzen 7 <- you just wanna flex or you're a tech guru doing cool shit on the side.
It seems things have gotten a bit more complicated lately. I've looked for build examples on YouTube, but every video I see is using a ryzen 9 thousand x3d chip. The chips are like $400+!!!!
Are these guys just flexing, or is that the caliber of cpu i need to avoid bottlenecks in my GPU?
I'd appriciate any quality "ryzen breakdown for dummies" breakdown video/article.

It's not all that complicated although like with most PC part things there is a certain level of obfuscation. The first number is cores (Ryzen 5 is usually 6, Ryzen 7 is usually 8, Ryzen 9 is more). The four digit number is series and model; 7000 series is slightly outdated but considered still good and 9000 series is the current one. 5000 series is for the older Am4 socket, but if you're doing a full rebuild now you might as well get a new Am5 motherboard. Numbers after that are just a straight comparison so 9700 is better than 9600 - in fact there is only a Ryzen 5 9600 and only a Ryzen 7 9700. X indicates a slightly better speed for the same model (7600 vs 7600x) while 3D indicates a much bigger L3 cache (very nice for gaming purposes)
Nowadays for gaming purposes the number of cores is not that important but you probably want at least 6, potentially 8 if it is in your budget. So that means Ryzen 5 or Ryzen 7 for most people. As for series, the 7600x is widely considered to be very good performance-for-cost, while the 9600x is newer but overall very similar. The 7800x3d or 9800X3D are way more expensive but also top recommends for their performance

just get the ryzen 7 7700 from aliexpress for 165 dollars
ryzen 3 just doesn't exist anymore
ryzen 5/7 is for gaming
ryzen 9 for producitivty
x3d is the premium line for gaming.
