I let my CFI/II/MEI lapse… Looking for a CFI in SLC that can take me up and sign me off for a checkride.

"Glider" seems to be my go to answer, but let me add another comment. I'm working w/ a guy now who is a retired Marine F-18 backseater who's changing careers to be a pilot. He's a lapsed CFI. I showed him how becoming a CFII was only a bit more expensive than getting CFI-Airplane reinstated and gave him a new credential too. It works out really nicely for me as a guy I just trained for CFI wants to do CFII right away - so my own prep efforts are sort of "once for two." CFIG requires 15 hours of PIC time. Commercial add on requires 20 solo flights. By making these just longer than the minimum pattern tow you'll get closer to this in less time. And, if you use Sport Pilot rules to add on (for interim purposes) sport glider privileges then you can use some of the 20 flights as prep for CFI, logging dual as PIC because you're a Sport Glider Pilot (Not every glider counts, but the ubiquitous SGS 2-33 does). The Soaring Society occasionally has some stipends for CFIG training.

If you want to have some fun, go do glider commercial add on and then CFI glider add on. Only marginally more expensive, will be fun, and gives you a new credential for your money rather than paying a lot for what you've got. My glider club is full of current and retired DL pilots.
