Shared information online, access to advanced tech to dummy proof the operation via bluetooth, wifi, etc..., improved supply chains that offer wider ranges of wood, fresher cuts of meat, etc... It's not a debate, the average persons ability to get a top tier rack of ribs in 1997 v 2025 America is vastly better.

100% this. I’ve got a pellet smoker in my garage. I’m sure some hard core purists (see “gatekeepers”) would scoff at it or say it’s not as good, but the end result is still delicious.

If you like your product, then that's the solution for you. I'm a "Snake Method" kettle grill smoker. Have tried much more expensive chimneys, offsets and barrels over the years and I prefer the method I first perfected when I started learning, 25-ish years ago. Never have tried pellets, don't see a need to. If they work for you, fuck yeah, dude, enjoy! Don't matter how the smoke gets in the meat, long as it does.

I get what you’re saying. The BBQ culture in places like Texas, South Carolina, or St Louis always produced phenomenal ribs, but in the rest of the country, a lot of people thought Chili’s ribs (drowned in sweet sauce) were the best that BBQ got. Throughout the Aughts, the sharing of info online, coupled with the number of companies producing smokers and equipment for DIYers, exploded. Pair that with an ever expanding foodie scene that was primed to champion “real” BBQ, and you can now get quality ribs coast to coast (which wasn’t true at the hight of Chili’s jingle reign).
