Which is better, Ford 5.0 V8 or Ford 3.5L V6 EB?

Depends on the year. 2018-2020 5.0s had oil consumption issues that may or may not actually be a problem. Both engines have cam phaser issues. 3.5s have turbos that may or may not be a problem one day.
Biggest thing on both of these engines is regular oil changes between 3-5,000 miles. Don't go over that and you can avoid most of the long-term problems.
You didn't ask, but the 2.7EB is arguably the most reliable of the three engines.
But the 10-speed will shit the bed long before any of the engines give problems.

Both are considered some of Ford's best high mileage engines. The EB has some less than desirable "features" such as turbos that can go out and the cam phasers with plastic guides for timing and the water pump is basically a timing job as well. Yeah, you get more power and better mpg from the EB, but that's not always the right answer. Nothing wrong with a good old fashioned 5.0 V8.

Water pump is not a timing job in the truck. In the sedan and SUV body it is.

I have owned both and lover the EB. Have it in a F150 and Bronco (3.5 HO and 2.7).

And the 3.5 EB will grenade itself at 150,000 if you actually use those tow ratings. 5.0l on the other hand can tow it's ratings for 300,000

5.0 is better over the 3.5 eb. If you're chasing mpgs by all means get it, but for everything else get the 5.0. Mind you, turboed engines drink more when under load.

I'd prefer the 5.0 if I'm buying used or keeping it long term. If you are buying new and don't keep it more than 7-10 years and drive normal miles per year the EB is fine.

I would think if you’re one to keep something for a long time, the 5.0 would be more reliable and cheaper to maintain.

I’ve owned both and it’s hard to say. Both treated me well but the ecoboost had more power and torque. Both were very reliable. Ecoboost are prone to more issues.

The Coyote is leaps and bounds above an ecoboost. Or ls. Or k24. Or just about anything else that isn't in like a supercar
