To be fair, it's tricky to not burn a toasted cheese while still getting a good melt. I feel like it goes from nicely browned to black and charred over the course of approximately 2.8 seconds.
Maybe hours to add an extra bit of sear but not too much though. As you can see in the picture he has no toasting so I feel like an extra few mins or even hours would do the trick 👌🏻
Interesting. I would have tried to scrape off all the burnt outside to try to save the sandwich. I don't think I'd like the charcoal taste. Then again, I did accidentally charcoal a Korean sweet pancake not so long ago, tried to scrape/break off the burnt pieces and it did taste okay. 🤔 It did have caramel on the outside, which can burn.
I guess you saved that cheese inside from the garbage.
As a long-time grilled cheese sandwich fan - it actually takes some experience to master all the variables. The heat settings, time, the pan, even the type of bread can all radically affect the result. Once when my sister was visiting I wanted to make grilled cheese sandwiches but I couldn't find the bread I always use (a muffin loaf) so I substituted something different. Did everything else the same, burnt them black.

You shouldn't need a lid for grilled cheese. At least I don't use one. I'm sure someone out there would say you do
