Do brits really eat toast sandwiches?

I saw a post on r/CasualUK about a crisp sandwich. It seemed to be potato chips on white bread. Astounding. After further investigation only raised more questions, I continued to look into the long, storied history of British cuisine. I happened upon an article concerning the culinary exploits of one Isabella Beeton, a woman responsible for authoring a text know as the “Book of Household Management. In this book was a recipe for an extremely economical toast sandwich. Do British people really eat toast sandwiches, or is this just a ripping good laugh over the stereotype of bland British cuisine? Also, is a chip butty a sandwich made with what we Americans refer to as French fries? And on the other hand is the crisp butty a sandwich filled with what we would call chips? As in potato chips? How did it never cross my mind to put pickle on a crisp sandwich? Will be trying it very shortly.
