Help with first high-end 4K gaming/editing build

Hey folks, I've built my last two PCs but they've always been mid-range meant mostly for video editing. My last one was built in 2016. It's got an i7 6700k with a GTX 1070, and I figured it's time to build something new that can run some games in 4k at 60fps+ while still doing a good job of editing when necessary (I don't do as much these days).
Let me know what you think! This is what I've come up with after a few weeks of research. I keep hearing the X3D processors are great for gaming, but I can't find any and they seem like overkill if I'm looking to mostly play single player titles in 4K. I'm skeptical about the processor in general, and don't know if this is also overkill.
Would love some help identifying where I might be spending too much or where I should invest a bit more. The only two things I'm really keen on right now are: that Fractal North case, and (hopefully) a 5080. I love the aesthetic of the case. I've heard good things about it too. But open to suggestions if y'all think I should go in another direction. I would love to keep it under $4K CAD if possible.

Do a build help request for air cooled fractal north mid with 5080...guys will tell you the cheapest good setup. Of course mention your desired gaming titles and resolution!

I think we could trim close to $1000 off this build and get you a 5090. Sounds like you have money but I think this build feels like neither an editing or gaming rig. So I am going to show you what I would do:
I would get a $300 CPU and a $100 SSD. That gives us $500 back.
I would get 32GB ram for a gaming rig max. You're actually overpaying by $100 for your 64GB kit, so that actually gives us about $700 back.
Get a motherboard for around $150-200 unless you have a need for many PCIe slots. That gives us $800. If I was building a serious editing rig I would want a full tower with room for sound cards, storage cards, spinning drives, etc. I would get the North XL in that case.
Sounds like you have money so idk why you are skimping on fans. Just get noctua or at least don't overpay for phanteks. Noctuas are overpriced now, but if you are going ATX mid tower and not using a radiator, you can literally buy the cheaper Noctuas. You are overpaying so wildly for the phanteks that it probably gives us another 50 bucks.
That is enough for a 5090.

This is incredibly helpful. I wouldn’t say I have money, but I have been saving and am expecting a decent bonus with which I can put a few more bucks into an upgrade. I’ll be honest: I don’t know much about fans. It wasn’t one of the things I did a ton of research on, so I appreciate that feedback! I definitely don’t think I’m going to be doing serious editing anymore, so not sure I’ll need the North XL or any of the additional cards. It has become more of a hobby now than a paying gig.
Do you think a 5090 is overkill? I feel like I would rather just save the money if you think I can shave most of that and still get great 4K results with a 5080 for the next few years. I was very happy with how far I was able to take my 6700k/1070 combo and am hoping not to need a serious upgrade for another six to seven years.

Multi frame generation is going to be sick. You are going to be able to buy a 4k 240hz monitor for 500 bucks MSRP soon and see those frames in AAA games. I think a 5070 ti or 5080 with a more modest 8 core 16 thread style cpu is the play for the next 5 years. All this stuff is a rip off right now because the gaming industry is in ruins.

Right now, I’d like to be able to play games like Cyberpunk, BG3, Yakuza Infinite Wealth, and the Final Fantasy games in 4K. I’m very excited for some stuff that’s coming out. Notably The Witcher 4, the new Doom game and I would love to dive into some PC VR titles!
