First build after 7 years. Need some help for gpu

Hi all, I'm thinking of doing a new build to replace my PC after 7 years. I was thinking about this build:
CPU: Amd Ryzen 7600 Mobo: Gigabyte B650 Eagle Ram: Corsair Vengeanche 16x2 DDR5 6000Mhz CL30 SSD: 1TB (I found the Lexar that seems fair to me as a price) PSU: Sharkoon 650W GPU: I was leaning towards an AMD 6750XT, 6650XT (better for the mil budget) or Nvidia 4060(?) CASE: Endorfy Ventum 200 ARGB (I was thinking of going for phanteks XT Pro Ultra but it costs more than 100 euros for the black version)
For the CPU cooler I was thinking of using the stock one of the processor, temporarily *The ideal for me is to play in 1080p 144Hz, maybe opting for a 240Hz maybe in the future. So 2k doesn't interest me at the moment

you could just update your cpu to a 5700x3d and skip the whole mobo/ram part

Move to 5700x3d + 6650Xt + a new 1TB ssd cost 550 euros. A little than 950 euro for a new pc. But the big question is: 16gb of ram is enough for gaming?
