What do think of this build? No real budget, just looking for a solid rig that will deliver high performance. Mainly dishing out for the cpu and gpu

Am I a square for only wanting the big name brand, ie. Asus, Corsair, amd etc.? Like you just save me 2-400 bucks for some minor changes

Yeah kind of.
Most pc parts are just rebranded stuff like the ram is made by Hynix, Samsung and micron and then they just put a heatsink with their brand name
Another examples is psus. Most of corsairs psus are from seasonic

The ram and GPU are definitely not solid high performance.
GPU wise I would get at least a 7800xt or 4070 super.
Ram Wise, 32gb is more than sufficient for a gaming PC, and optional speed would be 6000 cl 30.
The CPU is great, obviously but don't overspend at the expense of the GPU. Motherboard and cooler are also pieces you don't need to overspend on.
