CPU upgrade? What should I get?

I built a pc a long time ago when I was being cheap and got the ryzen 5 5600g so that I didn't have to buy a GPU. But.. now it's been a while and my games have been performing poorly (crashes, fps intermittently slows down, long loadng times, etc). I also got a gpu now so I don't need the integrated graphics anymore. I was considering the 7 5700x, 5700x3d or 5800x, or just anything better than what I have for less than 350$ CAD (241 USD).
specs: MSI B550-A pro, gpu: AMD Radeon 6600X, 2x16gb ram, cpu: amd ryzen 5 5600g

You're not going to get a lot of uplift from upgrading your cpu when you have a rx6600. Your cpu is more than enough to power it properly.

Fellow canuck here. I run a 5600X paired with a 6750XT on a B450 Motherboard. Are you GPU and Chipset drivers up to date?
I've been running my system for 18+ months and I don't get the issues you describe.
A CPU upgrade would likely not give you much improvement unless you are running CPU intensive games or very high framerates.
That being said if I was building now I'd get a 5700X3D.

I often play valorant which I heard is cpu intensive, but elden ring is the game that crashes the most for me.
I’ll see what comes out from the stress test… hopefully it’s something cheap to resolve

Might be a CPU overheating issue, and you are being thermally throttled.
I use a Peerless Assassin 120 SE and it keeps my temps nice and cool even under intense loads.

Could be cpu or GPU cooling, defective parts, etc. You can use programs like occt to run stress tests.
If you don't know what you're doing though, it's best to take it to a reputable shop.

5700x3d if you can find one.
