Is the difference in performance/parts worth an extra £60?

As I'm not able to post images please have a look at the link above. Would the difference in performance be worth the extra money? I've ordered the parts on the left but considering if I should have gotten the Ryzen 5 7500f and the DDR5 RAM instead. I will be 1080p gaming and modelling/rendering on blender,

Don't use UserBenchmark for anything ever. They are known to be unreliable and outright malicious in their "reviews" and the owner has a well known hatred for anything that says AMD on it. Use Pcpartpicker.com for your build and literally any other website for reviews.
The only real advantage to going with the 7000 series ryzen over the 5000 is future upgradability. Both CPUs should perform about the same and based on the builds you posted you're actually ending up with slightly lower latency RAM with your 5600 build. The AM4 platform is a dead end now though, but with the AM5 platform you could have the ability to throw in a better CPU in the future if you wanted.

I see, I don't really have any plans on upgrading and when I do I'll most likely get a whole new build anyway. I've been told though the cards may perform differently on the 5600 build due to the PCIe 3.0 slot., would this be the case?

Top end GPUs are just now starting to see a benefit to PCIe 4 vs 3 x16. There might be a couple percent difference between them but you won't notice in normal use.
