I'm not surprised by his response, given the nature of the complaint, or the audience it called upon.
I think Chef Peja does an excellent job of respecting the culture around the cuisine. I also think he's a hot blooded Serb and not going to take any social media criticism lightly.

I was very underwhelmed by Pillar. Decent food for Dallas, but comparing it to other top foodie cities, I would currently consider it an after thought. The fat vs acid balance needs some serious work.

I went last week- abysmal service( which I can forgive given they haven't been open very long) but the food was not very good. Every dish felt lacking. Mot hai ba is shoulders above, just go there instead

Couldn't agree more - service and food were lacking at Pillar. MHB is definitely better. Maybe Pillar will improve with time, but I thought it was a B- at best.

Interesting! I had 50/50 service experience. Showed up 10 mins early for a reservation and was turned away due to “not having tables”. I was then called exactly 3 mins later to say my table was ready. Clearly a lack of organization up front, but I let it go. We were placed in the “chefs table” aka closest to the kitchen with servers basically rolling silverware at our table. Not a great experience. The server was extremely attentive though which was great given how hard that is to come by nowadays.
Spot on with the “lacking” comment. I hardly leave food on the table and I didn’t finish a single dish. I might have a different expectation of food than others in Dallas. Very happy most are enjoying it. I’m sure they will refine for the rest of us along the way.

Insane is a bit strong. It’s quite good and I look forward to going back in a couple weeks when they have their full wine program in place and have hit their stride. I was there during the soft opening week and they were still ironing out a few kinks, which is totally to be expected. Food was fabulous though.

Drinks and wine are both at an amazing price point. I feel like in Dallas if I get a drink with a bubble on it im paying at least $18, i think at steakyard it's like 13. There wine is VERY reasonably marked up, definitely the lowest markup percentage I've seen in dallas.

MĀBO - best restaurant in Dallas by a mile. Pricey and serious about the food, but absolutely great for a date. Le PasSage is also a great new addition. Bar Sardine is also surprisingly solid and fantastic date vibes, just call ahead for a reservation. Sanjh in Las Colinas is also worth the drive.
Strong disagree on Pillar unless they've fixed a lot of things since opening week.

Mr. Max is great, just ate at the owner's other place in Vegas (Kaiseki Sanga) - Max is a very different feel than MABO, though just FTI. Izakaya vs. kappo/omakase. MABO is only 8 seats in the whole place with two seating times - a lot more formal/fancy feel.

I think the hefty price tag scares a lot of people off — there are always plenty of seats available on Resy (even same day) and when I went for a birthday dinner date in June last year our seating was only half full. Def highly recommend the experience though and encourage people interested to try it out sooner rather than later; given the lack of traffic I kind of worry about the restaurant's long term sustainability.

How does it compare to Hatsuyuki in Fort Worth? That’s my favorite sushi bar. I’ve been disappointed at other restaurants since. But you say it’s more authentic

Hatsuyuki is fantastic, big fan myself - to be clear, though, MABO is not a sushi-focused restaurant (though there will be a sushi course). It is, first and foremost, a yakitori-based menu so it's really apples and oranges with Hatsuyuki. I would recommend Namo (West Village), Otaru (Bishop Arts), or Nori Handroll (Deep Ellum) if you're looking for a sushi counter experience. That being said, Naminohana (Greenville) will be the closest experience to Hatsuyuki since the chefs started there and left to start it.

Love Hatsuyuki! Mābo is definitely more swanky and high-end though than any of the similar handroll places around the DFW metroplex. If you've ever been to an omakase restaurant like Tatsu or Shoyo, Mābo is more in line with those establishments. It's a yakitori tasting menu so you don't choose what you want to eat, the chef provides you with the day's menu (usually 15-17 courses, which include 4-5 appetizer bites and 6-7 skewers that are grilled by Chef Masayuki right in front of the 8-seat bar) and you watch the production unfold. You can add on extra bites at the end if you're still hungry; we were pretty stuffed at the end of our meal but were curious about a couple of the rarer chicken yakitori cuts on the add-on menu so we tried those as well, but it's not necessary to feel more than satisfied with the amount of food. Mābo is as much about dinner as theater as it is about the food itself. The inside decor and ambience is probably what the initial commenter meant about it feeling like Japan when you walk in — it's very minimalist and there's a small indoor zen rock garden off to the side. I'd say Mr Max is equally authentic in vibe, just a different aspect of Japanese cuisine (the rowdy crowded izakaya vibe) instead. Hope that helps!

I really enjoyed Nuri, albeit quite expensive.
I'm huge into Korean food and it did well to balance high end steakhouse while having some interesting korean dishes like cheese corn, kimchi fried rice and they even had a fancy army stew.
Overall really enjoyed it but the price is hefty.
