After MX record change Office 365 no longer receiving emails from gmail/google domains

I have changed our MX record to point to Office 365, updated SPF, DKIM and DMARC and check them against MX toolbox and a host of other sites to ensure that all records say pass but I cannot receive emails from gmail or google workspace domains. Sending emails to these domains is fine and receiving emails from Hotmail, Yahoo, Samsung, gov.au and a variety of other domains is all working fine. Two days ago prior to the MX migration I decreased the TTL to 5 minutes for the old MX records and added the new MX record in with a low priority (big number) for a day and then increased (made number smaller) the priority so it was just behind the primary MX record. At the cut over time I set the new MX priority to 0 and removed the old MX records and made sure that SPF, DMARC and DKIM are now all passing. I have tried running a mail trace and the gmail/google workspace emails don't show at all which to me suggest that they are not even making it to Office 365. Is google somehow special/super slow with MX records? Is there something I may have overlooked?
