If you had £2-3k to spend on a vocational training course/certificate/licence, what would you choose?

I'm on the west coast of Scotland close to a large city. I live in a low cost of living town. I considered plant-related training but there's not an abundance of construction jobs in the area and those that are available are short-term/temporary contracts and I need something more stable and long-term.
Any suggestions appreciated. Could stretch to more than 3k.
