How future-proof is this build?

What is your intended use for this build? The more details the better.
large data processing projects, software development, video editing, easy to moderate gaming. most resource intensive game I would play occasionally is Cities Skylines. I'm replacing a nearly decade old PC, and am trying to build a pretty future proof system for the next decade. I also use several monitors (3 monitors daily, sometimes hooked up to a TV or projector)
If gaming, what kind of performance are you looking for? (Screen resolution, framerate, game settings)
high quality at 1920x1080 x3 @ 60hz currently, would like the option of upgrading existing monitors at higher framerates in the future
What is your budget (ballpark is okay)?
$1500 USD but hoping to be lower than that.

I'm replacing a PC I built 9 years ago and will repurpose in other ways. I want this build to not go obsolete in a few years. I know that the motherboard/case combo is driving up the price a bit, but really like the aesthetic of the BTF setup for cable management so i'm not looking at a mess of wires all the time. That part I'm willing to spend a little extra so it all looks good, but are there other areas where I could get better bang for the buck?
Follow-up question and potentially a completely different build: possible to shrink this down to one of the micro ATX Project Zero boards and use a smaller case such as the Tower 300?

It kind of depends upon what you're stiving for with "future proof". What do you really mean by that? Do you really mean a system that you're not going to upgrade anything for a decade? That's frankly an unrealistic goal, particularly if there's any gaming use in the mix.
Your Z790 motherboard can handle a 13900K or 14900K (minor upgrades from the 13700k you specify here), but can't handle any further Intel processors like the i9 Core 285k or any future generations of that architecture. So, any significant upscale in CPU is going to also require a new motherboard.
32GB of memory is probably enough for many of today's applications, but not necessarily enough for future applications (particularly those that use AI). Fortunately, memory isn't super expensive to replace in the future if needed.
The 1000W platinum power supply seems to have good headroom.
What is the RX480 going to be used for?
