Help! I cannot tell the difference between these two PCUs

Hi,
I'm working on an ITX build and ran into a snag. There are two PSUs that seem virtually identical to me, but have wildly different costs on Amazon and Newegg:
On Corsair's own website there is a $5 price difference (before any discounts), but on their Amazon storefront the price difference is nearly $100. On Newegg, it's even worse at a nearly $200 price difference.
The only differences that I have noticed are:

the cheaper version is consistently marketed as "ATX 3.1 compliant, supporting PCIe 5.1"

as per tech specs, the cheaper version has less SATA and PCIe connectors, but 1 PATA connector

as per tech specs, the cheaper version is a "fluid dynamic bearing" fan vs "rifle bearing" fan on the more expensive one
This is my first build, so none of these differences mean anything to me. Please help! Which one is most appropriate for my build? Also, if the SF750 goes out of stock, it wouldn't hurt to get the higher wattage versions in a pinch, correct?

Number 2 is the 2024 version, whereas number 1 is the 2018 version

That makes a lot of sense! On Newegg, it used to be labeled as such. Now, in the additional details section, it says it was first available Sept 1st, 2024, so that through me off.
The 850W version is only $10 more. Is there any reason not to get it besides budgeting?

I'd get the SF850
