1.Steak, rice pilaf, broccoli. 2.Steak and green beans in gravy. Petite yellow potatoes with sour cream. 3.Jerk chicken thigh wraps and fries. 4.Grilled chicken thighs, rice pilaf, green beans. 5.Chili. (Of course I added cheese and sour cream to my bowl) 6.Lemongrass and chili tofu with bokchoy in a broth over rice noodles. 7.Alfredo with plant based noodles, zucchini spirals, mock chicken, and fresh mozzarella. 8.Spaghetti with zucchini spirals and plant based meatballs.

I used that same skillet In my truck at marten transport, they had APUs and inverters and it worked great. Got mine at Walmart for like $20? Still working years later.

I can’t stand that burner you’ve got, I’ve gone through three of them and can never get my pan hot enough to actually sear before it cuts off to cool a bit before it kicks back on. I said fuck it and got a butane camping grill and grill out on my car walk. I get weird looks at the truck stop busting it, a steak, some asparagus, and some broccoli out.

Last truck I was on had an inverter built in and I could cook one pot meals with my little pressure cooker. Got a new truck last week that has no AC options so I’ve been living off truck stop foods which is no bueno.

When I make my plate, I spray everything with dawn powerwash. I use damp papertowels/wipes to wash everything out. Go over it to make sure everything is clean. Dry everything and put it away. I also have a collapsible sink in here if I’m being lazy but I don’t really use it. More work in my opinion.

Dawn Powerwash is the gamechanger here. It's a godsend for the lazy or if you just don't have enough time. Or both. It literally is just spray, wait 5 minutes then rinse. Love that stuff.

You can also wash your dishes at most truck stops, just make sure you pre clean them with a wipe so you’re not leaving food/grease in their sink. Well I do that to be courteous.

As soon as you park, start cooking. Olive oil or butter in pan. Season meat and fresh veggies in pan. Put a lid on it. Take lid off to stir veggies, turn meat over. Once almost done, add microwaveable rice. Put the juices over rice. Put lid on for 3 more minutes. Done. A one pot meal in less than 30 minutes.
Get paper towel. Spray everything with dawn powerwash. Wipe off with damp paper towel. Dry, put everything away. Done.

No. Just the tiny mini fridge/freezer that comes in the truck. I buy meat and put it in ziploc bags for each meal. I buy fresh veggies for the fridge bc the freezer is so little. I tend to eat meals for the week that use the same ingredients. I stop at a Walmart roughly every week and a half.

Have you considered getting a crock pot with a sous vide option? Getting one of those and a vacuum sealer for sous vide would allow you to expand your variety by a lot. I use a rice cooker to make rice and add diced broccoli to it. Then I use an air fryer to make sweet potatoes and dice that up. Mix it all together for rice bowls.
Consider getting these containers. They're amazing and water tight despite a bunch of use. They used to have an option for half 16oz and half 32oz but it's not there anymore. I recommend getting both a 16oz and a 32oz pack and leaving most at home. Keep the lid off if you're freezing liquids in them because they're so water tight that they expand on the bottom and don't sit flat on the bottom. That's how air tight they are.
I go to the asian market and get beef bones and chicken feet to make bone broth. I also use bones from rotisserie chickens I buy. I also get some veggies. Total cost is about 20 bucks for ~6 gallons of bone broth, because I do a second batch with the same bones. You could do this when you're home and use it on the road. I use the 32oz containers to store the broth in my chest freezer. If you got a larger freezer you could take them on the road and this would increase the quality of your meals considerably. Use the broth instead of water. The broth can also be microwaved to drink it straight. It's pretty good.

A hotplate is something I never even thought to have back when I was OTR. I had a small microwave (that I hardly even used) and a cooler, that's all. Even if had a hotplate doubt if I would have ever been in a mood to cook like this though. Not unless I was gonna be parked for longer than a 10hr. All I wanted to do was sleep when I shut down.

10 hour break. 8 hours to sleep usually about an hour and a half for me to cook and cleanup. I've made carne asada burritos I've made blts burgers soup steak and eggs etc. I run reefer so I regularly have a couple hours in a dock so I'll make an egg sandwich for lunch. 40-60 dollars on groceries lasts me about 2 weeks

It doesn’t take as much time as you think. We spend a lot of time on our phones. When you park, 2 minutes scrolling turns into 2 hours and then it’s time to go to sleep. As soon as I park, I immediately start cooking. Each meal took less than 45 minutes.
