Good luck, but having lived with thieving dickheads myself, I suspect that the only sure-fire solution in the long run is going to be a room fridge/food store.

I've got a full sized unit in my room, and we have a shared fridge in the kitchen and another in the front hallway. We have no issues with people eating each other's food though .

If it happens again perhaps go in to his room & if there is any cash take whatever cash the food cost or if he is cashless perhaps try spending his bank cards in order to replace the missing food?

No I am being serious. Obviously provided you only take items to the value of what you have had taken I can’t see the issue.
Obviously it would be idea if you speak to him & he replaces your food, but what if he refuses?

I get you, mate. I know he probably won’t replace it, and while it’d be fair to ask him to, I just can’t see myself actually doing it. It feels a bit dodgy, doesn’t it? Sometimes it’s easier to just let it slide, even if it doesn’t sit right. Honestly, I’m just praying he actually stops this nonsense.
