So here is my recipe that I use, its copied and translated by google because the original text is in serbian and Im lazy to translate it myself, so pay no attention to grammar: ///
Cabbage: - If its too salty wash it over running water for a few minutes or put it in cold water for an hour - Use smaller cabbage - Make sure the cabbage isnt too soft, choose thicker leaves but not too hard - Cut the tusk from the leaves a bit (middle part, the branchy thing). ///
Spices: - sweet paprika, pepper, salt, parsley. ///
Filling mixture: - use a mixture of minced beef and pork in the ratio of 70-30(%). - the beef should be shoulder meat - fry the onion, add garlic and finely chopped bacon, and finally VERY finely chopped tomato - use better quality long-grain rice (basmati), put it raw in the mixture - mix all the above and add one to two eggs. ///
Splash: - make a sauce from boiled mashed vegetables, fry a little in the oven and sprinkle with parsley for decoration. (Note idk whats splash and if its the right word, its the thing you add in the end to make it thicker. People usually use the flour+oil/animal fat, but its the vegetables that add taste to Sarma and Stuffed peppers so I prefer that.

An acceptable compromise. I would like to shake the hand of the man who invented sarmale. When my family makes them in an oven with teracota or however its called...damn. Theres a saying that works better in Romanian, its a rainbow on the sky of my mouth. We call the upper "roof" of the mouth the sky of the mouth for whatever reason.

I think polish Gołąbki are made in the oven, serbian is cooked for a frw hours and then some people toss it in the oven for like 15 min. We kinda prepare stuffed peppers the same way, but other countries also like to just toss it in the oven and cook it that way

No, my dude! This thing that we call "Zelje" in Serbia is the best for making sarma! Add some sauercreme to it, and it's divine!
Also, I made Srbija to Tokija a reality by putting Wasabi sauce on my Sauerkraut Sarma! That was sooo good!
Grapewine leaf comes in 3rd for me... Too tough and chewy...

.We know ștevie, some even use it for sarmale, but it is not a proper wrap for sarmale. Hell, if you feel fusion-y enough you can even use orach. I mean, you can wrap minced meat in anything, but that doesn't mean you should

Take a medium-sized leek, chop it into small pieces, then put it in a pan, add olive oil and fry it for 10 minutes. Add minced meat to the fried leek in the pan and fry for another 15-20 minutes, then add rice, black pepper and red pepper to the same pan and fry for another 5 minutes. After the frying process is complete, take sauerkraut leaves and put 2-3 tablespoons of the filling in each leaf and roll them up. Repeat the process as long as you have the filling. Arrange them in a pot and pour water over them Boil for 2 to 3 hours
