Should I get a 2000 mustang v6?

Ive seen people get a lot of shit for having a v6 instead of the gt version, I want to make this a “project car” is it worth it?

What's your end goal for it? If it's a v8 swap, it's a waste. You can get a 2V GT for a few thousand more.

Today, the V6 and Ecoboost 2.3 Mustangs are faster then the GT of that era.
Back then, the V6 was a dog. If you're buying a clean V6 and making a project of swapping in a V8, sure.

Sorry, you're correct that they dropped the V6 in the most modern iterations. Point being the more modern V6 mustangs beat the SN95 GTs stock for stock.
And you're also right, my go-to rental car is the convertible Ecoboost. It's a great pairing of both fuel economy and fun without exceeding the speed limit all too much. I once got upgraded to a GT but they had economy tires on it and that was a death trap.

What is the project part of the car? If it's a v6 stang that is already in poor condition, you really would be much better buying a V8 in similar shape.
Nothing ever gets driven harder than the v6 version of a V8 car.

The Mustang is meant to be a V8 and you'll be thinking about that if you get the V6. V8 with manual transmission are available on Craigs. Just search mechanic specials or project car.

I had 2001 v6 with the Mach 1 sound system in it, loved every minute of it, just make sure there’s no rear subframe rust I bought it with some rust within a year it was rotted had to replace the whole rear end. Lasted till 400k with minimal maintenance

You're gonna want the V8, trust. Even if you convince yourself that the V6 is fine it's gonna nag you every time you turn it on and hear nothing. It just is what it is.
It's not that v8's are inherently better or v6's are all bad, but rather, for some reason, the base model of a car never feels like getting the full experience. You always feel like you're missing out on the quintessential parts and just dealing with the impracticality of a sports car for nothing.

It's not worth it. Your gonna swap a V8 into it anyway so spend slightly more and get a clapped out GT if you want a project car.

There’s no project to be made here unless you plan on dumping a shit ton of money into it to reliably make more power and make it look good. They’re dogshit slow, pretty much all beat to hell, and you WILL get made fun of by everyone who knows anything about cars if you even try to be proud of it.
Source: buddy had one in highschool and got religiously flamed by everyone, lost races to NA civics, and had a dent or scratch on every single body panel. His was also the 3.9L anniversary edition so it actually does get worse.

If you care at all about performance, don't get the V6. The V6 sucked pretty bad until the switch to the 4.0L around 2005... The 4.0L still sucked but it was at least tolerable. It didn't get good until the 3.7L came out a decade later.
