Need some feedback on my 4K video editing workstation

I am building to enable 4k video editing with Premiere Pro and After Effects, but it will also game a bit on the side.

Do you live near a Microcenter? It might make more sense switching to intel for price to performance. A 14700K performs similar to a 7950X + Quicksync can help export times by 10%-15% if i'm not mistaken. Also you shouldn't really benefit more from a 4070 super. I think Adobe also recommends 3 separate storage devices so you prob wanna get 2, a high end primary device and secondary low end.

All of the CPU/MB/RAM bundle are for 32GB, and I really want 64GB. Will the 7950X run cooler?

I think you should be fine with 4x16 sticks on Intel if you wanna just buy another kit. I believe you can also ask the manager to upgrade the kit or sell the kit and buy a 2x32gb. I believe you can return bundle items too if im not mistaken. Both chips should have similar power efficiency.
