I had the same problem the first time I tried to make mayonnaise. Then I read somewhere that everything really needs to be room temperature. So I left my eggs and mustard on the heater for a few mins and it worked way better!

Add the oil much more slowly next time, and it really helps if your bowl is cold I used to work at a restaurant where we did this in bigger batches and I used to do it while standing in the walk in fridge, but keeping your bowl in the fridge until you start will help alot. Also when making homemade mayo I can not emphasize whisking vigorously enough, like by the time you're done you should feel like you just worked out your arms.

An immersion blender in a container just wide enough to fit the head is easiest. Wide mouth mason jars or deli containers should work

My foolproof method if making it is with an immersion blender, put the egg and acid of some sort and then just pour all the oil in. Insert blender to the very bottom and blend without raising it. When the emulsion starts happening slowly raise the blender inti the rest of the oil. Then add whatever flavors, spices, salt, mustard, whatever. It’s really fast and works for me every single time

Mustard works because it's an emulsifier, so if you don't like mustard you can add more egg yolks.

The only time I pray is when I am trying to emulsify something.
If you have one, use an Immersion blender, add more yolks. If it doesn’t fix it, add the egg whites or water. It may feel counterintuitive but emulsifications need water - if you have enough yolks and it still isn’t working, it needs water.

It's not hard, you just have to start very slow with adding the oil. I use the Good Eats recipe and have very good success. Take the chance, it's 1000% better than storebought.

You can save that. Just use new yolks and drizzle that slowly into the new, well whipped yolks. Use a blender or a hand blender for more sure thing.

For those who don't know how to fix a broken emulsion. Mix and egg yolk and some acid like lemon or vinegar and maybe some mustard if you have it to make a new emulsion and then slowly add in the broken emulsion. I used this trick to save a broken Caesar dressing and it works.
