Does your mom do the majority of the cooking? Maybe ask if she could incorporate them into some of your meals or show you how to if you're not there yet.

Also consider frozen vegetables as well. Although I do prefer fresh, I use frozen ones all the time for quick and easy veggies.
They make so many mixed varieties as well. Maybe grab a pack of stir fry style mixed veggies and add it to your frozen lo mein.
The possibilities are endless lol.
You could also stop by the cooking subs for tips and ideas! But again, either way it's great that you're making the effort!
Ooh, and salads!! Do you like salads? Tons of great and easy options to jazz the fresh raw veggies!!
Oh, and raw veggies with dips are nice too. Slice your bell peppers and grab a few when ya want a snack and dip them in whatever dip, dressing or sauces you like! Mmm, making myself hungry! 😂

Bro you are doing this on hard mode and choosing one of the least nutrient dense veges. Just make a little side salad with Parmesan cheese or some steamed/roasted brocolli again with cheese
Learn how to grill or roast vegetables. They're a hundred times better than boiled. Zucchini, squash, hot peppers, taters, sweet potatoes, parsnips, beets even broccoli and radish come out good.
I like just roasting a big fat pepper. I generally grill if it's above freezing, there's no mess and barely any dishes.
If you really want to get more veggies with little effort, try air frying some frozen veggies. If you don’t have an air fryer, they’re really cheap nowadays.
Get a bag of veggies, throw some in the air fryer basket with a drizzle of olive oil and your favorite seasoning mix, and set it to 400 degrees Fahrenheit for ~10 minutes (experiment the first few times to figure out your preference on the timing, I like them really well roasted, but you might have different tastes) and give it a quick toss halfway.
Fool proof (except maybe the first 1-2 times until you find your preferred timing) and tasty. I’ve done lemon pepper, taco seasoning, Santa Maria seasoning, and tons of others. All amazing.

My advice, Fry up some well-seasoned Brocoli, or asparagus... toss that shit in olive pil, salt, pepper, garlic powder, herbs of preference and some balsamic vinegar... you will never see veggies as a chore again 👌
Once you get the seasoning game on point you can eat some super-vegtables like brussel sprouts without wanting to gag... get them roasted nice and crispy the the oven... top tier veggie.
And ofc Lets lot neglect the leafy greens!

You can also get frozen veggies, there is not really a difference to fresh produce and it won’t rot away if you forget it
There are also a ton of vegetarian recipes ( of course you can eat meat with it) and vegetarian side dishes
