Also they’re not just one group, each family has their own beliefs and they actually are kinda accepting. It’s not like they don’t even have advanced technologies either, some Amish communities even have WiFi lol.

Also it's not tech that they can't produce, it's tech that they they believe will separate them from their religious values. For example, the amish can't use the internet, but some amish communities are fine with using computers for communication within their local community. Tbh a lot of the technology they don't allow are things that would make it easier for someone to get out of the community.

What about Rumspringa? I thought they basically have a coming of age rite of passage where they're allowed to try anything from the outside world and choose whether to join in the community or not.

Hello, I am not Amish but I am a Mennonite who has met some Amish people and knows a bit about their customs.
Rumspringa is an opportunity for someone in the community who is coming of age to live outside the community and engage with the things normally banned for them.
After a period of this, they choose whether to leave the community to be a part of mainstream society, or remain in the community.

Yeah but they aren't allowed to bring that stuff back to the rest of the community. It's also only like ages 12-14/16 (the age range is community dependent) so they can't really get a hold of the good stuff like video game consoles and the like since you'd need electricity to run ut

AI is amazing for coding, voice assistants, and a bazillion other things, there's just specific applications that are problematic, like slop content.
If AI is making mistakes and hurting people, we can ask why we are building so many systems that allow single mistakes to have such large effects?

The Amish aren't just a generic hodge podge of random people who reject technology, they are a religious community who reject specific technologies that interfere with their religious practices.

Amish don't necessarily reject electricity. I used to live near amish country in Pennsylvania and some of them had generators for tasks that needed electricity. Occasionally, you'd see a van pull up to WalMart and it'd be packed with Amish, making a weekly/monthly/whatever trip to stock up on stuff. Was driven by a non-amish, iirc. (this was 20+ years ago.) They don't reject technology in all forms. They will use it under the right circumstances.

Neo-luddites are probably closer to your intention than the Amish. There's a lot of... religious baggage that people overlook when they think of them.
