ULPT: Girl I used to see will not stop extorting/blackmailing me over dog bite

This girl I used to sleep with “supposedly” got bitten by my dog on both legs on one of the times she came over, she immediately let it go and slept with me, then the next day we walked my dog and she played with him. Come to find out the next couple of day the bites started to look nasty and she went to the hospital for some antibiotics, I went with her and she said I shouldn’t have bothered but I insisted.
Since then a couple of months have passed and this woman has threatened, blackmailed, and extorted me into going out with her, sleeping with her, taking her out on a date to “make it up to her”. Every time I lose interest, every time I’m out and about and she finds out she starts sending me paragraphs about how I manipulated her and caused her scarring behind the knee.
So far “the scar” looks 1 inch in size and is fading well in my opinion, but every time I tell her to leave me alone or go quiet on her she starts threatening me with my dog, demands “accountability” in the form of co2 laser treatment worth 1000s of dollars. Every time I post, every time I’m outside with someone else this woman begins sending me threatening paragraphs. She knows where I live, in the texts I may have admitted to the incident and apologized. We both reside in Florida. Please suggest a reasonable practical course of action, not something theoretical and odd like poison her or some weird crap. I need a legit suggestion to get this mistake from 2 months ago out of my life.

If you can move, do that. It's not necessary, but it would be the easiest way.

I don’t know about where you live, but where I live in California, if someone comes in to be treated for a dog bite, and has the dog owner’s information, we are required to report the owner and their dog to the county. I don’t know that anything happens from one incident. But it might be worthwhile to know if hospitals in your locale have any such requirements and if your information was recorded and what possible actions could be take against you and your dog before you do anything else.

write a check or get a money order. write "Full and Final Settlement of Dog Bite Claim.”
Type up a letter to include with the check stating that the "payment is intended as full and final settlement of the claim arising from the dog bite incident."
Make the check amount enticing enough to where any average person would be "fuck yeah" & run to the bank & cash it.
Once they cash it you can literally & legally tell her to fuck off, go get a restraining order & when she violates it you have the full weight of the law & courts behind you.

as long as she receives the letter & cashes the check (and it clears😒) contractually she accepted the terms & the payment in full.
If she does not cash it & possibly counters, its up to OP to pay up, in the same fashion with a letter & check in amount that will get her to accept.
OP has to weigh the cost of a possible lawsuit with how much he is offering up.
He can still get a restraining order in the mean time, but once she is served with that expect crazy to get crazier & a more then likely lawsuit to follow.

Which I am giving neither. My advice is purely anecdotal.
Block and move on.
Anyone can make a civil claim against anyone(within statute of limitations). Based on how far you’ve described this situation’s progression don’t try to control her filing a suit. She’s going to do what she’s going to do. Yes, the text messages would come out in discovery, or probably used for the personal injury attorney deciding if it’s worth taking on her case for only payment on the back end.
Even her medical insurance could send her notices asking who’s responsible for the injuries on the claims she’s submitting.
But the key thing is, she has to a show a loss in something monetarily, that is worth the cost of pursuing. Pain and suffering alone, usually isn’t really enough to make it worth while to sue someone(unless it’s completely life changing, which would probably monetarily affect them as well). Your situation would more be, “I couldn’t work for three months & had $2000 out of pocket medical bills as a result of this dog bite.”
You will then be responsible for answering that claim and spend the money to defend. Which is why…
Always have insurance. HOI is mandatory with all home loans, it’s kind of moot. Otherwise. Renter’s insurance is a must. Get Renters insurance.
You’re just out your deductible and maybe a few Q&A sessions with your insurance adjuster and/or legal.
Check your coverage. If you’re served, call your agent, notify them you had a dog bite, give them a summary of relevant facts, turn over and relevant information. Move on.

Do you have any assets? If you have no valid insurance and no assets, then you may be “judgment proof,” as the lawyers say. Unless she has a relative who is a lawyer and has a lot of free time, she will find it hard to find an attorney who will be attracted to this case. In their television commercials, they talk about justice. However, realistically, no lawyer wants to take a case unless there is some money to get.

What country are you in? In the U.S. a medical facility must report animal bites to animal control or police. Did she tell the hospital what happened?
Assuming your version is basically accurate you gotta block her and go NC, change phone numbers, and report her to police if necessary. Extortion is serious crime. Even if your dog bit her there are legal ways for her to seek compensation.

We’re in the US. She did tell the hospital but she’s “an animal person” and told me she dodged the animal control and did not give the relevant information, but her tone all changed when I refused to invite her over again.
I sincerely do believe she loves animals she has promised not to take it out on the dog, but he’s all I have left in my life, so Im worried and might need to move him to a different country to protect him

If this dog means so much to you why the fuck aren't you working with a veterinary behaviorist for his reactivity issues? Or at the very least put a basket muzzle on him when people are over at your house since you know he bites. But anyways, the crazy girl has no legal standing here if she tries to report a dog bite retroactively after lying on her first report. And even if she reported it the day it happened you'd only have to prove your dog was vaccinated and explain the situation (of her antagonizing the dog when told not to) for the animal control report. If he wasn't current on vaccines, you would have to quarantine (rabies precaution) and would get a fine. Just block her.

Taking him out of the country might involve paperwork like health certificates and might create a paper trail more than just finding a friend to watch him. At this point the odds are against losing your dog. Most states allow one free bite before putting a dog down. I would focus on what I said before. She will tire eventually.

If it happened so long ago what proof does she have at this point? What evidence does she have other than texts about a dog bite infection?

Just block her! Let her try to sue you! First of all you have to have something for her to get and I'm not sure if she thinks you do or not. Second of all she has to pay an attorney and a 1-in scar behind her knee is not something an attorney will look at and think they're going to get a big pay out over, so they won't touch that unless she pays them up front which I doubt she's going to do.
You could go through all the messages she sent you and screenshot every single one where she says it's okay or the scar isn't bad, anything like that, all the way back to the day of the incident. Snip them all together into a collage and send it to her next time she starts harassing you. Tell her I have proof that the dog bite isn't bad and here is the proof that you are using this to just have sex with me... those text or emails from the beginning when she admitted that or anytime she admitted it and tell her you're going to file harassment charges on her if she ever contacts you again.
But you have to actually do it if she contacts you again. Anything else you do that she doesn't know is you might make her come toward you even more because things are getting rough in life and she thinks that she needs you in her life so maybe she thinks she'll fix it? I don't know! She sounds unhinged.

It’s easy to threaten court action. It’s a lot harder to actually go through with it. Lots of paperwork, court fees, ect. This isn’t a small claims, this is a damages thing. So if she says “hey you owe me” “you need to make it up to me”. And you did, regardless of what it was. It could’ve been a frosty at Wendy’s, you both agreed that it would make things right, so she can’t keep asking for more. I’m just saying IF she pursues legal action you should have more than enough evidence that you did everything you could when the bite happened and have since then tried to “make things right”. If your dog is up to date on its vaccines and you have home or renters insurance, block her. If she tries to report or sue, you’re covered.
If that’s not the case, obviously get on that, but in the meantime just make yourself unattractive to her. Be boorish on dates, bad in bed, “forget” your wallet. Let her get bored of you and she won’t bother you again.

She also has hospital records and your admissions via txt. Many states have a "one free bite" rule. If your dog ha never biyyrn anyone prior to this... You may be off the hook. I don't know anything about Florida law but it should be pretty easy to find out. If FL does have a free bite rule.. Then just ghost that nut and enjoy your life.
If on the other hand... FL does not have a free bite rule. Then there are two possibilities.
1 you have money or insurance. In which case she might find a lawyer willing to take the case to sue. If u have insurance they will defend u and if liable pay up to the policy limits. One thing many people don't know is that plaintiffs lawyers will almost always settle for the policy limits even if the damages are far in excess of same. They don't go after defendants personal assets unless they have excessive wealth. This brings me to the second possibility....
A dog bite case like hers is worth about 5k on top of medicsl bills in my state. I wouldn't sweat this.

When you get back to your place, already have a typed out letter (preferably written by an attorney) and get her to sign it to void any future liability for the dog bite.
