Why would you cut with the grain? Once a steak is cooked, if plating, cutting against the grain creates shorter muscle fibers and a more tender finished steak.

Muscle fibers typical go on one direction. Like fiber in a rope.
Normally you want to cut perpendicular to the fibers, not parallel. It's typically much easier to chew short muscle fibers then long.

Dunno how you feel about seeing meat, but look up a picture of raw flank steak. Or maybe this link will work.
This one is easy to see the fibers all running the same direction, left to right. You would cut this across the grain (top to bottom), not lengthwise

If you eat a lot of veg, a good plant comparison to this is asparagus.
Imagine cutting a stalk of asparagus into coins, rather than splitting lengthwise.
Asparagus has the same type of fiber structure going on where it all runs the length of the stalk. If you ever got a particularly fibers piece of asparagus and tried to eat too big a piece, I'm sure you know what I'm talking about

I had wondered why it seemed my food cools off too quickly at home vs at a restaurant and used to eat fast because of it. I started heating my plates like they do in restaurants and I find that makes the meal so much better. It's actually keeping my food warm then instead of sucking the heat out of it.

I have a stack of cast iron pans in the corner of my stove (for lack of room) and I put my plates there in the general vicinity of all the heat. Warm enough!
I used to work in a kitchen as my first job when I was like 16 and those heat lamps were great. Fancy restaurant in a small motel. I used to have to do prep, dishpig and room service. Ex dot the chef's would sometimes throw the room service lids on and then put the whole thing under the heatlamp. So we had all these plastic slightly warped / bubbled lids 6 dishes on a tray, 2 wide, stacked 3 high, soup on top wobbling around, and outside stairs to get to some rooms, no elevators.

This can taste quite amazing if done correctly and with good quality beef.
In Japan they call this Tataki, more commonly it would be done with tuna but you can also find it with beef called „gyu tataki“ or „wagyu tataki“ if done with wagyu beef. Any cut of meat or fish that is safe to be eaten raw can be seared and cut into slices to achieve this. Tastes amazing even served cold with a sauce like Ponzu to dip the meat in or served over rice.

Was always taught in a kitchen for fine dining we never grilled "blue" it was always cooked in a cast iron skillet for around 2 minutes on each side but it temped around 85-90°F mostly did it with fillets though...

I feel the need to point out that this steak has been sliced the wrong way, as in, with the grain of the flesh. Slicing this way gives the diner a perception of a chewier steak. Slicing against the grain, perpendicular to the direction the muscle fibers run end to end, will ensure the steak eats as tender as it should. This being raw meat and sliced the wrong way probably made it seem like chewing on a rope.
