I noticed something when Guinan was talking to Wesley in tenforward. She asks his if he blindly follows orders, and he says he tries. The she asks, "Are you sure this is what you want to do?"
She's El Aurian, did she know then that Wesley would be a traveller?

I'm unsure El Aurians have precognition.
GUINAN: How about a cup of nectar direct from Prometheus?
WESLEY: No, nothing. That's the third time you've asked me.
GUINAN: It's what I'm expected to do. Don't you always do what's expected?
WESLEY: I try.
GUINAN: Even if it's not what you really want?
WESLEY: Sometimes. Sometimes it's more important to consider others before yourself. GUINAN: Yes. But sometimes the game is to know when to consider yourself before others. Give yourself permission to be selfish.
This sounds much more like Guinan being wise, as befits someone hundreds of years old.
There's better evidence for her having a form of, not exactly precognition, but call it parallel universe sense in Yesterday's Enterprise:
PICARD: Guinan?
GUINAN: We need to talk. Somehow this, this is all wrong. This is not the way it's supposed to be.
[Ready room]
PICARD: You must have some idea how things have changed.
GUINAN: I look at things, I look at people, and they just don't feel right.
PICARD: What things? What people?
GUINAN: You. Your uniform. The Bridge.
I'm sure that El Aurians 'paranormal' abilities have been explored in Beta canon, whether that clarifies anything or further muddies the water I couldn't say.

I was paraphrasing, but thanks for providing the entire dialogue. To me, that hints that she seems to know what Wesley would want to do.
