Other than the nude sunbathing and urinating off the transom while holding onto the back-stay kind of stuff?

but how about the wave, fish?

There is too much 'drama' on YouTube sailing channels. After setting the sails to eliminate as much weather helm so your wind vane can work and checking for chaff on the lines, there isn't really much to do while in the middle of the ocean.
Racing is different because the sailors are trying to milk the most speed out of their boats. Cruisers worry about where they left their favorite coffee mug the night before.
Waves come with the territory. Depending on the size of your boat, you are going to bounce up and down or roller coaster it each and every day.
I do not fish when I sail. I have no need to eat fresh fish while on the water.
I guess the biggest thrill would be when the winds die off and you are sitting on a sea of glass and you can go swimming with thousands of feet of water below you. Just have to remember that you are not on top of the food chain while you do this.

thanks foo many helpful comments

I wonder what will the running costs be. Videos are pretty heavy when it comes to traffic, and afaik, all the Internet plans when you're on a boat are limited both in traffic and speed.

It is mostly hanging out, keeping to the watch schedule, sleeping and looking forward to the meals. I tried to catch as much as possible on my videos. I suspect a livestream would be incredibly boring except for some of the conversations. Even when weather gets spicy, we still need to get our sleep so the watch guy has to deal with the weather.

got it and thanks

Having crossed 2x, I can say there is very very little out there but water.
What are you looking for? Animals? Weather? Big waves? Just a general idea of what happens when you’re out there?

i am a fans of seasteading, but i don't have sailing experiences, i have many ideas for seasteading, but it only work depends on the site situation, for eg, you mentioned big wave, i had heard of calm belt at equator and the other place, but what's the real situation there? are there really no wind in the whole year? or just with comparative little wind? and how about the seawater and the animals and plants there?
also i'd heard of that huge pumice raft had been floating in the pacific ocean at some area, but its a news years before, are they still there? is it possible to collect them for building giant floating platform using iron wire net just like gabion in the land?
and i still had lots of idea need to be verified, i am very eager to find someone or some livestream helping these

The Vendee Globe, a solo non-stop race around the world just started yesterday. It's a very competitive and cutting-edge race in extremely fast 60ft sail yachts but they have amazing coverage from the boats - some teams put out more content than others and this year with Starlink there should be some great content. https://www.vendeeglobe.org/en is a good starting point for more info, a list of the competitors and a live tracker. Then try YouTube and Instagram for the teams own content. Team Malizia are typically very good at putting out videos.

One of the key parts of ocean-crossing prep is working out how to entertain yourself for the boring bits. That's what 95% of it would be. You would switch off.
