4070 super with 5 7600 OR 4070 super with 7 7800X?

The 7600 and 7800X will have nearly identical gaming performance. Get the cheaper 7600, unless you do something besides gaming that would benefit from the extra cores. https://www.tomshardware.com/reviews/best-cpus,3986.html

Should be fine. Your internet bandwidth would likely matter more than the speed of your computer in that use case. Do you mean 7800X3D? There is no 7800X CPU. The 7800X3D is significantly better for gaming performance, but also much more expensive and not worth it with a 4070 super IMO.
