Tried to cook my eggs with my noodles, ended ruining both of them

Eggs turned a god awful gluey wet texture whilst soaking up all my noodles sauce, and my noodles turned bland and mushy. 0/10 will not be trying again

If you're going to dump beaten eggs in I'd recommend cooking them on the more raw side otherwise you end up with broken scrambled eggs like this

If you're boiling the noodles, poach the eggs individually (don't let them break).
If stir fry, beat the eggs first. Cook the two together similar to fried rice.

Yeeaaa the latter is what I attempted cause I’ve done it with rice with no problem. I think the noodles sauce may not have been the best to cook eggs with

Noodles first, they’re the kind you boil then finish as a stir fry in sauce, added beat egg after frying noodle and sauce together and then that mess happened

Next time try eggs first. Or mix the eggs with the noodles first and throw them in together.

I reccomend just doing a regular fried egg in a separate pan and putting it on top later. I did this exact same mistake OP so I feel your pain

I’ve made this mistake as well, and when trying to make fried rice. Cooking separately is the answer. But if you don’t want to dirty an extra pan push all the noodles to one side and cook the egg in the other. You’ll have a little bit of cross over but as long as you keep the pan hot and don’t stir everything together until the eggs are done it’ll be fine. Even get some crispy bits on the noodles too.

Where you trying to make bukkake udon or like dry udon? Like wtf it's not hard. You just stir the egg into the mentsuyu like egg drop soup. There's all kinds of noodle dishes like this in Japan. Concept is fine it's just the poor execution

Nah just a few minutes, they soaked up the sauce that was on the noodles and made them a lot darker lol

So this is an attempt at almost carbonara.
Use 1:1 ratio of whole eggs to egg yolks. Wisk the eggs with enough grated Parmesan to get it to a kinda grainy pudding consistency. Then add a bit of boiling hot pasta water while whisking furiously until it gets to like hot fudge consistency. Then toss with your cooked pasta and presto.
Optional:boil some frozen peas with the pasta, top with bacon bits (or pancetta), add chopped fresh parsley
