There is a drastic different between properly handled sushi/sashimi grade fish and wild caught jack/trevally that likely wasn’t handled correctly.
There’s also a polarizing difference between sashimi and lightly cured, improperly made ceviche that is a disgrace.

The Maori name for the one I'm talking about is He Ika Mata. Very similar to Kokoda. Many pacific islands have their own variant with their own name. They are all delicious from my experience.

As others have pointed out, the whole point of ceviche is to cook the fish using citrus. You even said yourself that this wasn’t thoroughly “cooked.”
A longer cure wouldn’t have changed that. In-fact, it may just increase the risk of becoming sick due to the fish sitting too long.
The tried and true method is cubing for a reason. Not sure why you’re being so stubborn.

In its totality, the reason would be to ensure full, all-side coverage of the (reasonably) smallest and uniform pieces of fish so you can sure a deeper saturation of the acids into the fish and a faster, more cohesive “cook” /“cook” time.

I live in Chile. Perú and Chile are basically the home of ceviche (more so Perú, but Chileans still love their ceviche). You are supposed to cube the fish. Pictures of other people doing it wrong do not change the fact that you must cube the fish. Not cubing your ceviche is like making "mashed potatoes" that are just whole potatoes broken up a bit with a fork.

Ceviche can vary significantly by country. I am Peruvian and as such I think we make the best kind 😆 It's simple and brings out the best in the fish.
The way we prepare it, for example, is with smaller limes, similar to key limes, but not as "sweet." Then, we make sure to use red onion as the topper for the fish. We have to "pickle" it slightly to cut the harsh onion flavor. We also add culantro, which is slightly different from cilantro, as it is thicker and has a punchier flavor to compete with that lime. Having little access to it most of my life, however, cilantro is the only but very reasonable substitute.
It is always served with steamed or boiled "choclo" which is an Andean maize with very large kernels (if you've ever seen hominy, the size is comparable but the choclo is naturally this size and doesn't require alkalizing). The choclo is less juicy, starchier, and not sweet like the yellow corn we're used to in general and this helps temper the acidity of the lime.
Finally, we also add a side of boiled sweet potato or yam, and that sweetness balances the acid and starchy corn. The finishing touch is the "canchita" which is the maize mentioned earlier, but this time fried and salted, and this adds a delightful crunch to the tender fish and softer sides of maize and sweet potato.
When eating Peruvian ceviche for the first time, a good Peruvian will tell you to put all the ingredients on your fork. Take a bite of the fish, onion, maize, and sweet potato. Pure heaven. Served with a nice blonde ale, it's chef's kiss
Mexican ceviche on the other hand, usually includes tomatoes and avocado, and they do not add corn or sweet potato. The crunch they add is usually a side of tortilla chips or a tostada.
Hands down, Peruvian ceviche wins every time.

Yeah what you serve it on does matter. Most of the foods it’s served with are super crispy like tortilla chips, tostada, plantain chips ect because they hold their consistency better than other options and the crisp keeps helps balance the moistness of the ceviche.
Deffo cut your fish much smaller and into cubes serve the aforementioned sides and it’ll be loads better.
The crisp really makes a difference.

I’ve never eaten a corn tortilla that has come even close to tasting like a mouthful of corn and I live in Tucson. Even the tortillas I’ve eaten in Mexico still taste pretty different than straight up corn considering they’re made from masa harina not fresh corn

It's a regional thing. Shrimp ceviche is just gross.. if you think about shrimp being filter feeders and all that. It's just shrimp cocktail without the cocktail sauce. I see it a lot on Mexican menus. But I'm a Peruvian, and all Peruvians are ceviche purists (read: snobs).
