So, during the step where you stir/fold in the flavoring, you somehow had too much water content in whatever flavoring you used…. That’s why there is a sort of “jelly” layer at the bottom.

Be very wary of water content. Many recipes call for you to use warm water+cocoa powder, and fold that in, but I find just cocoa powder to work better. If using a liquid, it must be a highly concentrated extract to not have the jelly layer on the “bottom”
