Why do a lot of Hypercars make more power on E85 than standard fuel while most sports cars have a bit more power with E5 than E10?

E85 has 85% Ethanol and 15% gasoline and Hypercars often have several hundreds of PS more than with standard gasoline. With this in mind it would only make sense that E10 would make more power than E5. Or is E85 some special fuel with a high octane number and not the same as E10, just higher Ethanol percentage?
