What’s a good Windows 7 gaming laptop that can play games of the 360 and PS3 era?

I have a modern gaming laptop but I definitely want one that has a feel of the games I was playing in my later childhood.

It's going to be a lot easier to find a solid gaming laptop for cheap. From the 2015-2020 timeframe, running Windows 10. They're not going to have much in the way of compatibility issues with Windows games released from 2006-2014.
But if you want some Windows 7 laptop. I'd look for one with a Sandy Bridge or Ivy Bridge i7 CPU and a GTX 480m/580m GPU. For peak Windows 7 laptop gaming.
If you mean playing 360/PS3 games under emulation. You really want a pretty modern 8 core CPU and fairly modern mid range GPU or better. Running Windows 10/11.

nope not emulate, but that way I could give a timeline of the kind of pc games i’d be playing. My current gaming laptop is what i’d use if i wanted to emulate.

Look at Dell Lattitude E series 6540 and make sure to get one with an AMD or Nvidia secondary graphics card. A Precision model line will work too. Stay away from Inspiron consumer grade models.
The only only sure way to tell if a model has a secondary graphics card is to look up the Service Tag on Dell's Website.
For dell laptops the model number's roughly follow:
1st digit: class = 6/7 are the higher tiers 2nd digit: screen diagonal = 5/6/7 15"/16"/etc 3rd digit: Generation of the model = 4th was in 2013. After 6th generation all the CPU's are soldered down...so no cpu upgrades are possible. 4th digit: processor type = 0 for Intel, 5 for AMD.

Well an anything from a Core 2 with a GTX 8800m/280m to Ivy Bridge with GTX 480m/580m. Depending on if you want a high end late 00s or early 10s experience. A 17” Alienware would be the stereotypical gamers model.
