Having never done this, does it really take that much athleticism to lean off the side of a boat?

Stability is important fore and aft when trapping. It's not particularly physically demanding if your form is good. It's a technique and balance thing I'm commenting on. Trapping off an F18 is pretty straightforward compared to a 49er or other skiffs besides the speed of acceleration and deceleration.
Lean off the side of the boat? Are you talking about hiking? That is on the other hand very physically demanding and has a lot of technique that varies between boats.

Today was way more wind, I needed my friend fully off the back corner. Last week I didn’t need my brother at full extension since the wind was easier and wasn’t gusty. In light smooth wind F18s need to be balanced such that the leeward knuckle is just grazing the water.
