Looking for advice/thoughts on the pc parts/pairings for a new pc

Hello, I haven't built a pc in about 10 yrs. But, I decided now may be a good time to build anew as I'm concerned my current build will not hold up much longer for newer games (since I like to play on high/ultra high settings).
These are the components I'm looking at:
- PC Case: Lian Li O11 Dynamic EVO
- CPU Ryzen 7 7700/ Ryzen 7700x
- GPU XFX Speedster Merc310 AMD Radeon RX 7900xt
- Ram: GSkill Trident Z5 Neo RGB DDR5 6000 2x16gbs
- PSU: Super Flower Leadex III 850w +80 Gold or Lian Li Edge Series EG1000 - 1000w 80+ Platinum
- SSD WD 2TB SN850X
I'm super on the fence about trying water cooling for the first time, but it seems to be going fine for my bro so I am eyeing:
- Lian Li Galahad II LCD 360 or NXZT Kraken Elite 360
This is pretty much only for gaming and my budget is about $2000. Definitely hoping for some nice sells in November. If it helps my most recent game is Baldur's Gate 3 (which my current pc plays fine) and I have my eye on Dragon Age Veilguard. Any thoughts or advice is appreciated.

May I ask for your thoughts on why going for the higher priced card? I checked the specs it is better than the one I picked and maybe I overlooked something, but I don't see the justification for choosing the \~$200 pricier card as the spec difference seems minimal?
*I'm probably also biased as XFX hasn't let me down before lol
Also, thanks for the suggestions. It goes a little over budget, but looks very solid.

The 7900xtx has more memory and is better than 7900xt, but it depends on how big the price difference is. For example, right now, the difference between the 7900xt and 7900xtx is only 100 euros in my country, so it's an obvious choice to get the 7900xtx. When I build the my pc at the beginning of this year, the 7900xtx was 270 euros more, so I got the 7900xt hellhound instead. The brand doesn't matter if is XFX or something else. It all depends on price to performance. If the 7900xtx is too expensive, then get the 7900xt, and together with the 7800x3d will still be a good pc. The pc build list that I gave you I have it ( with the exception that I have a 7900xt) and it works perfectly.

Thanks, I do see your point. I know that more usually means better. Have you experienced or been able to find anything concrete on if the higher gb on the gpu is significant? Only asking because when I was researching if there was a difference in performance between cards that had 16gb vs 20gbs vs 24gbs I couldn't find anything useful. Sorry, if that is a silly question I'm just interested in knowing if all this dedicated memory is being utilized fully or if its a just more is better situation.

Those fancy AIOs with screens are super overpriced. You’re paying three times as much just for the looks. If that’s important to you, go for it. I’d prefer something like the Arctic Liquid Freezer III.

I've looked at that one and it did seem tempting. Did you have any trouble installing it? I saw a few reviews saying they had a little trouble because of having to press it down really hard. Some even mentioned having trouble with the AM5 socket type.

It's a bit frustrating, hard to line up, but you only do it once, so not a big issue.

Thanks, I'll keep it in mind as I am looking to cut the cost of the build down where I can since I still need case fans.
