Ladenia is not typical on the entirety of Greece, but where I’m from (Thessaly), we typically make it during the lent. It’s like a pizza, but without sauce, cheese or anything. Just onions, tomatoes and olive oil

The Antichrist™️ and ladénia are totally S-tier foods. Ladénia I'd even rank higher than pizza when it is properly cooked, with the onions and the olive oil synthesizing into a sweet creamy mush. Paϊdákia don't really hit the spot for me, but they are worth it if you're into lamb. Gýros and mousakás should be lower imho. I'd prefer kontosoúvli over gýros, and kokkinistó over mousakás.

Our veggie dishes remain unappreciated by foreigners, despite them being extremely common among Greeks.

Mousakas treats eggplants fine, I don't know what y'all are on about. Even you don't know how to cook or the eggplants you buy are shit. We grow eggplants in our garden and they taste amazing, they blend in perfectly with the potatoes, the minced meat and homemade bechamel. It really makes all the difference to mousaka

Look, I'm not arguing against eggplant in general (eggplant is a great vegetable that works wonders in a huge array of dishes), or your home-style mousakás specifically (I'm unaware of it, it might be the best mousakás in existence, the one dish to rule them all).

I'm arguing against the average mousakás, the garden variety. It's not bad, it's just average and one of the reasons it is average is because people tend to over-fry the eggplant and then cover it with sauce, resulting in a soggy, sad eggplant that adds nothing to the dish.

Because people tend to enjoy stuff they eat habitually, especially if they are combined with memories of their loved ones. Someone unfamiliar with emulsified pork lard will probably be totally grossed out when seeing others eat it with onions and bread, but if you grew up eating it with family and friends you'd just shrug their disgust and keep on eating. Same thing applies to soggy eggplant.

Pastitso is very good and 1/4 the effort. Moussaka isn't that bad either, because it includes many veggies. The problem is that the veggies will end up soggy by the time it cooks.

Maybe a solution could be to make a thicker kima/ragu, and thicker bechamel. And let it in the oven for very few minutes until just the top browns a bit

The actual sound is a soft "H" "Hristos" and means "anointed". Since anti- means opposing, antichristos=the one opposing Jesus Christ, antikristo= (meat) opposing (the fire).
