I ate grilled bananas in Ecuador and they were the best thing ever. I came home and tried a lot of different methods and decided that cooking a whole banana is almost impossible to do well. The only way it works is if it’s caramelized, which it will never be in a baked good.

It might have been but I remember our hosts calling them bananas even though we ate lots of plantains on the trip too. It was almost 20 yrs ago though so I can’t be sure.

They may have been plantains (although the English speakers we were staying with called them bananas while we also ate plantains) but they were definitely grilled. I am very familiar with maduros and tostones. This was a street food that we saw being made.

When they get nice and brown turn them into banana bread. That's typically the best route. Or banana muffins or something like that. Or if you catch them prior to that you can make some yummy banana cream pie.
If you like the taste of your dish just slice it up next time. You can mash it up but you might have to tweak your recipes and if it's very ripe reduce the sugar as part of your tweaks.

I don't like bananas nor does my spouse. Unless they're bread, mixed in a smoothie, or the frozen cream desert. My kids don't like the brown ones (and they know they're sweeter!).

Haven't made a sponge cake in a long time. From looking at your picture though I suspect you might have mixed it to death. Sponge cake needs a lot of air bubbles. Possibly your ingredient ratios were off, lastly it could be an ingredient substitution like butter for margarine or maybe you already know the problem.
The one good thing about chocolate cake is unless you really screwed up the recipe it usually still tastes good.
