I know it’s a widely renowned recreational activity to point out how unrealistic their roadmap and chances of success are, but I legitimately hope they succeed (even though the odds are low). I would love to see a supercruising civilian passenger jet actually operate in my lifetime.

Whilst I think this company is a total scam, what they claim they're going for is a quiet sonic boom, which is fully a real thing developed by NASA. They just don't have any designs. Or engines. Or contracts with reputable companies... But they have a goal!

It absolutely is, they have been saying it from day one.
"“Sonic boom mitigation is absolutely a part of the future,” Scholl says. “We will look to learn what we can from NASA’s effort, and it’s something that we expect not for our first airplane, because that would break our rule about no new regulations, but for our second one in the future.”"

Not for the overture, but they have said they wanted it for the symphony. They originally said it was for the overture, but then they realized they had literally no engineering or plans or anything at all to backup their claims and lowered their standards to just making a supersonic passenger aircraft.

Science is often wrong. That's the point of science. We observe phenomena, we formulate hypotheses as to why phenomenon does what it do, we perform experiments to determine the nature of the phenomena or to prove/disprove the hypothesis, then we publish the results.
Then, later, better technology exists to test phenomena, so we re-test the old hypothesis with new technology/new methodology, and discover that the hypothesis was either not fully correct or was wrong. We try to figure out why the old hypothesis was wrong, we re-test the new hypothesis lots of times, then we publish those results.
Since we are saying that somebody else was wrong, other people all around the world are going to use our paper to re-create the experiment precisely, and see if they can get the same result we got. If yes, then new science is accepted and enshrined (until new science comes along). If no, then new hypothesis is discarded and we start all over.

Science is often wrong in the sense that we lack a full understanding of certain things so time and data can often reveal what we think is true to not be completely correct.
Science is rarely wrong in the sense that “everything we’ve been told” about something is completely wrong. This will not be one of those cases.

Yes, a complete reversal of knowledge is... statistically unlikely, given a rigorous application of the scientific method previously, but, to discard it as an impossibility would be extremely dangerous. Nothing is truly impossible.
