Seems like a good idea, since we can always just change the font back if we want. The default font should be something that's consistently updated and quickly confirms to any new modern day accessibility standards.

That's cool. I've been looking into typefaces recently and I've used Inter in my GNOME setup. I switched back to Cantarell, though, as I didn't like the look of the algarism 4.

I think the people bringing Inter to Gnome have already or are currently figuring that out.

Not happening this release; too many things need fixing to make it look right in the GNOME interface, plus the font needs features added (mainly it needs small caps).
